Quick & Delicious Breakfast Casserole

This protein packed breakfast casserole is super quick, easy, and has endless customizable options!

Ingredients
  

  • 1 lb sausage
  • 1 bell pepper
  • 1 clove garlic
  • 1 large baked potato
  • 1 cup shredded cheddar cheese
  • 1 tsp salt
  • 1 tsp red pepper flakes (may reduce to 1/2 or omit)
  • 5 large eggs

Instructions
 

  • Preheat the oven to 350°
  • In a medium sized skillet, brown the sausage until it is thoroughly cooked. You can sear it to give it some color and additional flavor .While the sausage is cooking, chop and mince the pepper and garlic.
  • Scoop the cooked sausage into an 8x8 or 9x9 casserole dish. Leave the sausage fat in the pan, and use it to cook the peppers and garlic until soft.
  • Pour the peppers and garlic into the casserole dish, on top of the sausage.
  • Grate or mash the baked potato and sprinkle it into the dish as well.
  • Crack the eggs into a bowl and add the salt, red pepper flakes, and any other spices you desire. Whisk until the yolks are mixed, then pour over top of everything in the casserole dish.
  • Give it all a little stir to make sure the eggs spread out evenly. The sausage and vegetable layers don’t need to be thoroughly mixed unless you'd like them to be, but the eggs need to saturate to the bottom of the pan.
  • Sprinkle the grated cheese on top, then use a spoon or spatula to push it down all over. It will float back to the top a bit, that’s okay.
  • Top with salt, pepper, and any other spices you like.
  • Bake for 20 minutes or until cheese is melted and it is heated through.
  • Once it is baked, switch the oven to broil and broil it for 3-5 minutes until there is nice color on top.

Notes

You may exchange the veggies for what you have on hand or prefer. 
You can mix up the spices, try onion powder, cilantro, or thyme.
You can use turkey sausage or bacon in place of the pork sausage.
